Goan Pork Vindaloo -- from the husband-man


There is this Netflix show called "the Indian Matchmaking" which has created quite a furore in the Indian community!! I am not aware of current match making scenarios in India but the show was entertaining reality TV. At first I couldn't believe some of the things I heard like the constant demand for "flxible, fair, slim" girls as a bride!!! This was the 21st century goddammit. but then I never believed in a virus stopping life either.
Many reviews and comments on FB felt the show was vile and cringeworthy but I feel that it is partly true of the Indian society. You might deny it and downplay it, but it is not far from the truth.

In India, the discussion, judgements and arguments over eating habits, veg or non-veg, pork and beef is as vehement as the show!!

Last year November when I was in Kolkata, I was on the Calcutta roads a fair amount of time. There was a particular driver whose car I would rent. I had a really good time chatting with him as we plied the roads of the city, from one corner to the other.

One day he asked me "Didi, apni pork khan?" (Didi do you eat pork?)

I ho-hummed and admitted that I did. "It tastes almost like chicken", I assured him.

"Kintu Didi beef? Beef o okhan America te?" (What about Beef? Do you eat beef also in America?)

I ho-hummed again. Well we do eat beef once in a while. I don't like steak because I find the meat too gamy to my taste but my kids love Italian meatballs and those are best with ground beef

"Haa khai majhe majhe," I admitted to eating beef occasionally.

The driver was alarmed and he admonished me, "Kintu Goru to Ma, Goru khaoa apnar thik noy." (but Cows are our Mother, you shouldn't eat them).



Probably his words came from the heavy hand of religion but I couldn't blame him. I did not eat beef or pork growing up in my home in India. Ours was a middle class Brahmin family, pretty conventional about the food that was cooked and eaten. So pork and beef were strictly beyond the realms of food that we could eat. In fact for a long time even chicken was not allowed in my grandmother's home, though we were allowed to cook it in the garden or eat outside. I never saw any of our family or friends eat pork sausages or steaks either, and I largely categorized them as meats that were popular only outside India. Only later did I learn that sausages and cold cuts were very popular among a certain section of Calcutta Bengalis even in the days when my Mother warned me never to eat such meat.

I desperately looked for a reasoning beyond that it tasted good. I mean eating meat, any meat itself is not the kindest thing as my daughter keeps reminding.

"But oita to America'r goru, ora amader Ma noy," I mumbled. (Those are American cows. They are not our mothers.)

The driver pondered over this, and reluctantly nodded his head. I breathed a sigh of relief.

A month later, my Mother calls me on the phone, "You eat beef? And you discussed that with the driver? He complained to me about your eating habits."

I stayed mum.

While I did broaden my eating habit, after coming to the US, only recently (in the last two years) have I started buying and cooking meat other than goat, lamb and chicken. We are still not great at cooking beef other than in meatballs or burger but pork is right up our alley.



During the lockdown when chicken was scarce, we bought pork loins a few times from Costco. The husband-man made a Pork Vindaloo, from his memory of pork curries that he ate in small eateries around his hostel in Kolkata. We asked a couple of our Goan neighbors for recipes and they shared a few which I duly forwarded to the husband-man on whatsapp. he combined teh recipes, did something and madea relaly mean pork Vindaloo.

Now I have never had a Pork Vindaloo back in Goa but his tastes so good with just the right balance of spices -   the curry is on the thinner side like a jhol but spicy hot, the tartness of vinegar balances the heat but still man it is hot. In all it tastes delicious with white rice and a salad on the side.

Pasta Mexilian Bolognese -- or 3 ways to use the same dish

In the face of increasing number of deaths in New York and New Jersey, my lament about grocery stores sounds petty, There are many people getting very sick, there is an army of doctors and nurses and other healthcare workers tending to those that are very sick and getting sick themselves, there are the grocery line workers, the mailman, the garbage guy all risking their lives and out on the street while all I can complain about is going to a grocery store.

I am eternally grateful that we are able to stay home safe and so far doing okay. The little we can do to help flatten the curve is -- stay home and that is all we are doing. Thank you Google for this beautiful doodle thanking healthcare workers and researchers in the scientific community.



I had written this last week to remind me many years later how our day-to-day simple chores like grocery was impacted by the coronavirus.

It is now the 16th day that I have been home and except for groceries once in 8-10 days, or a quick walk around the neighborhood, we have not ventured out anywhere.

Grocery shopping itself has become a nightmare.

Before going to the store, we have to wear masks, gloves, sunglasses.

Then on reaching the store have to wipe the shopping cart down with a disinfectant wipe.

After hauling all the grocery home, is the biggest task!

For the fresh vegetables, I got 2 weeks back,I had washed them and left them out in the sun. I chose a particularly sunny day to do grocery. If I had a Benimadhab Shil er Panjika (a Panchang) I would have consulted that too! I don't intend to buy Vegetables again.

The non-perishables I keep in garage for 72 hrs.

The perishables like milk, meat etc has to be brought inside. Also the frozen stuff. This means more work.
I try to wipe down the bags and then when possible transfer the contents to another bag before putting in freezer finally.

At the end of this whole ordeal, I never want to go back to a grocery store again! Seriously.

Yesterday I went to Costco and it felt I was living in a dystopian novel. Costco has restricted access to only 30 members at a time inside the stores, so it was pretty empty, none of the usual rush. Every person was wearing a mask and gloves and moving around silently, picking up their groceries. No samples. No one peddling Vitamix. The check out persons were all behind a plexi glass shield and the usual happy faces were missing.

The employees were managing the social distancing very well though including the checkout lines. Pretty impressive.

Since we are all staying home, the kids do not have their after school activities and I do not have my grueling daily commute anymore, I do get more time to cook meals during the evenings. Even then it always helps if I can cook one dish and re-purpose it in different ways over the week. That way everyone gets to eat something new and yet I can ration pantry ingredients. Also my efforts in the kitchen are halved.

This dish is one of those which can be very easily serve many purposes. The primary purpose is of course the sauce base for one of our favorite Pasta dishes.

This pasta is my take on Bolognese. But it's Mexalian Bolognese 🤣, like Italian + Mexican!
.
First I make a chilli with ground chicken, canned tomatoes, garlic, onion, peppers and taco seasoning. Also some good old bhaja moshla and kashmiri mirch.

This chilli is then used used in 3 different ways.



1. First as a sauce base for Pasta. Our favorite Pasta Mexilian Bolognese


2. Second on a Roti or a Tortilla topped with avocados and onions. Or on a crepe made with millet and oat flour



3. Third you can make an empanada or a chicken patties like I did. I had puff pastry sheets and I used those

Chicken Roast for Christmas


Christmas is right here, the year is done, and I have been super lazy this month. The last few days has been crazy as it always does when the holidays are upon you and you have procrastinated.

But not my fault totally. The thing is my India trip this November, totally messed me. Though there was a lot of running around to do while I was there, I did not have to do any of the daily chores. I mean, no meal planning, no lunch or dinner to cook, no clothes to fold, even the cup of lebu-cha was brewed and brought to me. That kind of luxury goes to your head.

*At this point, if you are in India and reading my blog, you are probably rolling your eyes*

I get it. That is normal for you. Most of my friends and cousins back home, actually look upon me with pity if I happen to tell them that I actually have to cook the lunch that I pack for the school lunch boxes!! We live a hard life, I am telling you.

So anyway, all that life of pleasure totally ruined my system and I have calmly delegated almost all cooking to the husband man or to our favorite Sichuan restaurant.

If I had continued to live in India, I am telling you this blog would just go defunct. Thank God for small mercies!

Now, a couple of you had messaged me, asking to share a roast chicken recipe. I get it, it's Christmas and  a roast chicken is a delicious thing for a Christmas lunch. Also it's just the kind of dish you would like to make all through winter.  It is a one-pot, rather one-tray dish and you can stand near the oven and watch Netflix, all warm and toasty. Yes, I have my own weird reasons for cooking.

Whenever I make roast chicken, I do it with Cornish hens. We are not big meat eaters and two Cornish hens is perfect for our family of 4.  These are smaller hens which taste really delicious and easier to handle for klutz-es like me. Don't be ashamed of being a klutz. I am one and the world needs all kinds 🤓.

This roast chicken recipe that I follow is fairly simple.🍗 I don't have the exact measures but if you are in doubt about how much olive oil or butter, i would just say err on the higher side.

Recipe is for 1 small Cornish Hen

Wash the chicken thoroughly inside out and remove giblets if any. They will be in a small pack, for your ease, the store does that!
Oh! And don't forget to pat the chicken dry.

Now I take half a lemon 🍋 and rub it around the inside cavity of the hen. I also rub it in any crevices and nooks and crannies. Lemon is like deodorant for the hen.

Then I make a spice paste with following
🍂Olive Oil ~ 3-4 Tbsp
🍂Little butter ~ 2 Tbsp
🍂Garlic paste ~ 1 Tbsp
🍂Ginger paste ~ 1/2 Tbsp
🍂Tandoori masala or Garam Masala ~ 1 tsp
🍂Black pepper powder ~ 1 tsp (best if you powder whole black peppercorns)
🍂 Red Chili Powder ~ 1 tsp
🍂Salt
Mmm...so good.

Rub this paste around the inside cavity of the hen. Then gently lift the outer skin and massage the spice paste on the outer side.Make sure the spices and butter reach all the crevices. I have never had a massage this good myself.
Rub the paste on all sides of the chicken as you want your whole chicken to be flavorful.

Liberally salt the inside and outside of the chicken.

Let the chicken rest for one whole hour. It has done hard work.

Pre-heat oven to 425F



Now heat olive oil in a skillet and brown the hen on the outside. The skin should turn a pale golden.
🐥It is NOT necessary to do this skillet step. Instead you can just brush the outside of the chicken with olive oil+butter.

Now arrange the chicken on a roasting tray. Stuff the inside with whole sprigs of rosemary, plenty of cloves of garlic and lemon halves. You can add vegetables like small potatoes, carrots, onions to roast in the same tray.

Roast for 70 mins to 90 mins at 425 F. You will know it is done when juice runs clear when cut between leg and thigh.
🐥Baste the chicken with the olive oil+butter+dripping-in-tray halfway through the cooking

Serve with bread, salad and the roasted vegetables.

Tumi'r Chicken Malai Kabab



Today is Bishawakarma Pujo.

And guess what ? I do not have a single food memory of this festival.

Tomato? Potato? Khichuri? Biriyani? Potol Posto? Neem Begun? Bishwakarma ki kheten🤔

Nothing. Zilch. Nada. My brain throws up a 404 Error at "Bishwakarma Pujo Food". Ki blasphemy!!

There are several for Durga Pujo, a couple for Lokkhi Pujo, a nice number for Saraswati Pujo, even one for Ma Mongol Chondi'r Pujo.

But Biswakarma? Nothing. My mother never made anything special for this guy. Neither did my Thama, paternal grandmother.

Even Dida, my maternal grandmother, who usually was the one with all the rituals and related food, did observe something called "Arandhan", on the day before Bishwakarma Pujo but that was for another goddess Ma Manasa.

Actually I don't remember my Mother making anything special on Ganesh Pujo or Karthik Pujo either.

Do you see the trend here ? I guess these Bengali females were more feminist than any. They made special dishes only for the Goddesses!

But I believe in equal opportunity. If Durga, Lokkhi can have their bhog er khichuri and narkel naru then Baba Biswakarma can have my Kababs.

So what if the women in my family never cooked anything for him! I have other resources.

These tender, soft, juicy malai kababs are my friend's sister's recipe. She lives in UK and she shared this recipe with me almost 4 years back. I have made it umpteen times since then and everytime I make it I remember her saying that she uses "Crème fraîche" for this dish, for that is what they get in Europe and not just some blah "sour cream".

There are many recipes of Chicken Kabbas out there but I always, always stick to Tumi'r recipes. And every freaking time I make these kababs with hung yogurt, some cream cheese, a little sour cream -- I say to myself I should have used "Crème fraîche"!!!

That is how recipes are for me, they are always about who told you about it, whom you learned from, where you heard about it, whose home you tasted it, who gave you those small to  and what you remember it by.



Chicken tenderloins cut in kabab sized cubes -- 1.5 lb

Marinade Ingredients

Thick Greek yogurt (or regular yogurt strained of whey) -- 1/2 cup
Sour Cream -- 1/4th Cup (I usually don't have sour cream at home so skip this)
Cream Cheese -- 3-4 Tbsp
Olive Oil -- 2 tsp

Spices for marinade

Garlic Paste -- 1 Tbsp
Tandoori Masala -- 1 tsp
Red Chili Powder -- 1 tsp
Chat Masala -- a sprinkle
Dried Mint -- 1/2 tsp
Green Chili -- 2 minced
Lemon Juice -- from 1/2 lemon
Salt -- to taste

Marinate the Chicken pieces with all the ingredients listed under "Marinade Ingredients"

Then add all ingredients under "Spices for marinade"

Toss the chicken pieces well making sure all pieces are well coated. Now refrigerate for 1 hr to overnight.

When you are ready to cook, put the pieces on a skewer. put the skewers on a grill rack with a dripping tray below. Into the oven at 375 F for 20 mins.

Then take out and turn the skewers. Drizzle a little bit more of olive oil and put to broil for 6-8 minutes

Serve it right away with salad or roti.

School Lunch ideas: You can also cool and freeze in portions and add these to noodles or fried rice or even make a chicken tikka gravy with these kababs

Grilled Chicken with Sate Oil



I have been obsessed with this grilled chicken recipe and had to share it here. It is perfect for the summer. A little marination and a whole lot of flavor.

Usually I marinate my chicken with Indian spices for grilling. However that was getting kind of boring. The other marinades that the husband-man uses is bit bland for my taste and the chicken is not as juicy as I want to be. psst... he doesn't agree though.

Until...yes until last week...when this recipe changed my life and grilled chicken's.

The recipe is from Bon Appetit magazine, an annual subscription gifted by my lovely friend. I took two recipes of Chef Tom Cunanan and then made them my own.

First, I was blown away by the Sate Oil. This is very similar to the Chili Garlic oil that you get at Chinese or Thai restaurants.



Next was grilled Chicken where the chicken was marinated in a brine and that contained guess what ? SPRITE. Yes, sprite. The sweet-lemony and fizzy sprite did do wonders to the chicken. The aromatics (yes the author kept saying aromatics for ginger, garlic etc and I loved it) in the brine add a lot of flavor to the meat. The meat was also very juicy and did not become at all dry after grilling.

The original recipe of the grilled chicken called Chicken Inalsa, involved Acchiote Oil but I did not have it.

So, I grilled the chicken as per the recipes and then basted it with previously made Sate Oil. The best thing ever. That oil is amazing. Be liberal with Sate Oil if you wish to kick up the flavors. Serve grilled chicken with a simple salad, add it to pasta, or in a sandwich. It is delicious.

The Bengali Chicken Curry is the most simplest of Chicken Curries popular in Bengali homes. While the Goalondo Steamer Curry or Railway Chicken Curry has now gained popularity, those were not how chicken was cooked in most Bengali homes. This chicken curry recipe is the curry that millions of Bengalis in the 70's and 80's grew up with, their Mothers cooking this dish for lunch on lazy Sunday afternoons



A few months back I got an email.

This is exactly what it said

Didi,

Apnake Jodi Bengali Sunday dupurer chicken curry ranna Korte hoy , family r jonno . Apni ki bhabe ranna korben ?

What is the best recipe apnar kache ? Kindly ektu information dile khub Khushi hobo .
(Didi, If you have to cook the Bengali Chicken Curry for Sunday lunch, how would you do it?)

At first I was a bit irked by this email. Not by the reader as I guessed he was a much younger guy and yet had not called me "Didi" and not Mashima !!. But you know how this "Robibar er Mangsho" has been done to death and restaurants now have it on the menu and folks who have no idea what "Robibar er Mangsho" means order it on a Wednesday night and eat it with naan and a bottle of chilled beer while watching "Didi No.1" on the telly.

It totally sucks the joy out of the whole thing. Honestly it doesn't really make much sense if you are cooking it on a non-Sunday or eating it at a restaurant or using your "food delivery" app like Swiggy to order "ek plate Robibar er Murgi dena".


As chicken slowly started replacing goat meat/mutton in the Bengali household's shopping list, due to affordability or being a leaner choice of meat, the Sunday Mutton Curry was replaced with a rustic Chicken Curry instead.

Tell me, what is a Robibar er Mangsho aka Sunday mutton Curry if not followed by hours of bhaat ghoom (siesta), bangla natok on Kolkata "Ka", and lingering turmeric colored aroma of a jhol on the tip of your fingers until Monday morning ? And most importantly, what is a Robibar er Manghso if not Goat meat!!!!

So this is what I replied

Eita trick question kina bujhlam na !!! Sunday to Sunday to exactly same hobe na. Eikhane ekta mutton er dilam. Chicken diye mostly ei rokom i kori, konodin moshla beshi, konodin jhaal beshi, konodin duto gajor instead of aloo, je rokom Sunday sei rokom jhol :-D
(I don't know if you are asking me a trick question. Whichever way you cook your chicken on a Sunday that will be your Sunday Chicken Curry!)

But then I cooled down. I realized the world has changed a whole lot since the times when we used to have meat only on Sundays. In the late 70's,  in most middle class Bengali families like ours, everyday lunch and dinner would be dominated by fish. And when I say fish, I don't mean Malaikari or Kaalia for dinner everyday. Simple fish curries with mustard paste or vegetables in season were the usual norm.

Now Sunday was a red-letter day as that was the only day that offices and schools were closed and so lunch would be a family affair. That was also the day when goat meat was cooked for lunch in most Bengali homes. Meat, in particular Goat meat, was not something we ate every day. It was both expensive and also considered a food rich for daily consumption. Chicken or Murgi was not cooked in most Bengali homes that had matriarch like my Grandmother's. She allowed goat meat but considered "murgi" foreign and so it was banned from her kitchen.

So mutton curry aka "pa(n)thar mangsho" on some Sundays(usually the Sundays earlier in the month soon after payday) was something we lived in anticipation for. By the sheer magic of being a rare and thus much awaited occasion, the Sunday Lunch of Meat Curry and rice took a special position in our heart.

Things changed a fair bit after "chicken" started being used widely in Bengali kitchens. Chicken was cheaper than goat meat, cooked faster, and so it could be cooked on any other day too instead of fish. Often on Sundays, goat meat was getting swapped with "murgi", making it a "Robibar er Murgi'r Jhol". It was not a recipe with unique ingredients, nor was it a heirloom one. It was just a chicken curry, cooked fresh with freshly ground spices, that was had with rice for lunch and led to long hours of siesta afterwards. Yes, the siesta part stayed the same.



As we became global and more connected, that humble chicken or mutton curry was pushed aside for what seemed more fancy names like "karahi gosht" or "chicken rezala" or "coq au voin". Meat wasn't special enough to be cooked only on Sundays any more. You could have it any time. If not at home then outside. And since we all know that familiarity breeds contempt, we didn't really bother about "Sunday Dupur er Mutton Curry" any more. Until that is we grew older and nostalgia struck big time. We didn't want to eat mutton curry whenever we could, we wanted to wait, to build up that excitement for we finally understood that
Happiness is not in getting something but in the waiting.

In my home here, we eat chicken a couple times a week. Strangely we eat mutton maybe once in a couple of months. On a Saturday or a Sunday, when I cook chicken or mutton I usually stick to that same age old recipe my Mother followed on her Sundays.Nothing extraordinary, no special ingredients. I also cook with a lot of jhol. My daughters call this "Weekend er mangsho'r jhol". For them, it is a curry that has potatoes and enough gravy to be mixed with rice.

Here's the recipe of Sunday Dupur er Chicken Curry for the next gen. After wading many waters and making onion paste, grating onion, blah, blah, I have realized the easiest and simplest recipe works best. After all, who wants to waste all of Sunday making Chicken Curry for lunch ?



I also use a Radhuni Meat masala, which my friend had got for me from a Bangladeshi store. It is really good. In its absence use any other Meat masala.

Chicken Rezala -- a regal stew

The typical Bengali style rezala is a mildly spiced, fragrant, yogurt-based stew with chunks of meat. It owes its origin to Mughlai cuisine. This is my recipe of Chicken rezala, which is not exactly like the muslim restaurants in Kolkata but close.

September is close to an end. Pujo is upon us. And no has any time to breathe. I cannot believe that 8th grade and 3rd grade started in our home 3 weeks back. We are already done with "back to school" nights and summer seems to be a bygone affair.

This summer was special as my parents were here after almost 3 years. They are getting older and the visits less frequent. It is no longer easy for them to hop on a trans-atlantic flight and traverse continents. Both my girls goaded them into coming and once the flight part was put away, they were looking forward to their stay as much as us.

We were lucky to do a lot of short trips around the home with them this summer. My father loves visiting places of interest and is comfortable with long walks, while my Mother has a bad knee which prevents her from walking more than a few yards at a stretch or standing for too long.



Thanks to my father, we re-discovered Philadelphia, surprisingly a city which we never thought of visiting unless it involved work or shows or passport office or such. But my Baba, wanted to visit Philadelphia this time and see the Liberty bell. So off we went on a Sunday morning. It was a gorgeous sunny day, one of those summer days when it is not too humid, and Philly treated us so well.

For me, the best part of Philly was the Reading Market. The covered market teeming with various food specialty shops, bakeries and people reminded us so much of New Market. I spent quiet sometime there, roaming around, not able to decide what to eat and then settled for guess what ? The Philly Cheese steak.


Another weekend we went to a beautiful sculpture garden, not too far from home. Again a place that we had always intended to visit but could never make it. The parents definitely enjoyed the sculpture garden with its unique pieces but the kids too had much fun.

Next up was the Dingman's water fall in the Delaware water gap area. Delaware water gap is beautiful with many natural jewels strewn across the area and Dingman's falls with its well constructed pathway was the ideal trail for my Ma. On our way back from the falls, we stopped by the Delaware river. The sky was overcast and soon a heavy shower rolled in. While everyone else ran back to the car, me, my Baba and Little Sis stood under the tree, breathing in the rain and gazing at the sheer curtain of rain falling on the Delaware river. It was a curious thing, how one person from each generation in our family stayed back in the rain and the other went back to the car like sensible beings.

This picture still takes me back to the day and I can hear the rain drumming on the river.



Next up was trip to the Great Wolf Lodge, a indoor water park, which had taken mythical proportions in our home by the dint of sheer marketing. I am glad we finally went and got it over with this summer.

In between we had guests, visits to the beach which is close by, movies and lots of cooking. Well honestly, my Ma was doing most of the cooking. One of the days, I made a Chicken Rezala for them. I usually make the Mutton Rezala as the goat meat packs in a lot of flavor to this otherwise light stew.



Rezala, is a very popular dish in Calcutta, a signature dish speaking volumes of Awadhi influence on Bengal's culinary history. It is a mildly spiced, yogurt-based stew with chunks of meat. To just call it a stew would be undermining this royal dish. It is not just any stew but a stew that is made regal by lightness of its gravy and the fragrance, which comes with use of Kewra and saffron. The best Rezala can be found in restaurants like Sabir's and Shiraz's in Kolkata. To have a plate of their rezala, the pale golden gravy with a thin layer of ghee floating on top and morsels of soft meat, and mopping it up with soft as mulmul roomali rotis is an experience that you would not want to miss.

I would like the add here Prtihs Sen's comments on Rezala here. She has a deeper knowledge on the subject than me and thinks the Rezala has its origin in the Afghani dish names Rasala.

"I would like to tell you my impressions about the Rezala. All muslim cuisine in Calcutta/Bengal is not Awadhi. The Rezala I feel, the word probably originating from Rassala, is of Afghan origin, to be found only in two places in India actually -- Bengal and in the Rampur cuisine of central India, both very different recipes yet both Afghan strongholds at one time. Awadhi cuisine in Calcutta adapted it to fit into their offerings and while it is also found in Lucknow, its not a very popular dish there as it is in bengal. Deepshikha's Bengali Goat Meat Curry in Oven -- at Smokies




This Spring Break we went to the Smoky Mountains -- the Great Smoky Mountains. One of the few national parks in the east coast. I am a sucker for National Parks and after our Yellowstone trip last year, my secret desire is to visit all of them. Does not seem like that will happen in this lifetime with the money and time I have at my disposal but that does not mean I won't try.



But the Great Smoky Mountains did not happen out of my love of National Parks. It happened because that was the place decided for a mini reunion of our college friends from twenty years back. It happened millions of whatsapp chats, several hangout sessions late in the night and couple of Google spreadsheets later.

Each hangout was peppered with more serious issues than the last. Luchi or eggs and bacon at breakfast? Pathar manghso on Saturday or bbq? Cookies with tea or muri-chanachur? Pasta for kids or Maggi? Yes we are very focused like that.

Finally a beautiful 8 bedroom chalet in the mountains was booked, food items from goat meat to mustard oil, maggi to maacher chop were packed, and we were all ready for the 12 hour long drive to Tennessee.

If I am honest my first impression of the Smokies as we entered Pigeon Forge was that of deep disappointment. I had Yellowstone and Grand Canyon on my mind and had not expected traffic jams and departmental stores from Wal-Mart to Macy's at the throes of a national park. The fact that we reached on a Friday which was a holiday could have contributed to the throng of crowd.

Once we managed to cross all the traffic lights and crawl onto the mountain roads, the traffic peeled off and feel of the forest came back. The path up the mountains had several switchbacks and took scary sharp turns. The trees grew closer and the air turned crisp. My faith in national parks was restored.

It was early spring and the trees were mostly bare except for the light green haze of budding new leaves and splashes of spring flowers here and there. After going through a couple of wrong turns and several phone calls to friends who were already at the chalet, we finally reached the house with a truly "breathtaking view". The Mountains rose right across from the house, its peaks swirled in the typical bluish haze that is quintessential to Smokies.

The kids had lot of fun on zip lines and horse back rides. We went to Jayell's Ranch where even the little ones could zip line on a shorter trail

It was much fun meeting friends after so many years, getting to know their kids, the better halves and generally indulging in what we call in Bengali as "bhaat" -- meaningless banter. Food and adda were the focal points in the backdrop of the mountains. It was fun to see the kids bond with their new friends and have  a great time of their own.

While we were discussing the menu in the days leading to the trip, and trust me it would always end up without a consensus, there was the question of how to cook the goat meat. Should we carry a Pressure cooker ? Will the kitchen have a large enough heavy bottomed pan to cook goat meat for twenty people ? Will Donald Trump be the president ? Should we move to Canada ? You know that kind of questions on which no consensus can be ever reached.

Smokies has lots of pretty waterfalls. We did the Laurel Fall and Grotto Fall hike. Each were approx. 3 mile round trip and easy hike with kids


At this point when everyone was arguing over chat and not really listening to anyone else, our friend from Ohio, Deepshikha said, "We will do the Panthar Mangsho(Goat Meat curry) in the oven. You don'y need anything else except for a largei-ish aluminum tray".

This was so profound that we all just stayed quiet until I mustered to courage to ask "if it tasted good". I shouldn't have. Asked that is. Deepshikha and Biplab are trailblazers in Ohio, investing a lot of time and effort in their local community, doing Durga Pujo and throwing lavish parties with tons of food. They KNOW how to cook mutton in oven and make it taste as good as kosha mangsho.

Mete Chorchori -- Goat Liver Fry the Bengali Way



I don't know about you but I simple love goat liver aka "mete" in Bengali. Chicken liver -- not so much but Goat liver -- yum! My daughters freak out at the very idea that I am eating innards of an animal and refuse to even taste it. Having been fond of mete since a wee young child, I don't understand their reaction.

While "mete" was always thrown in when one bought goat meat back in the days, now I hear it has to be bought separately. The middle-eastern butcher shop where we get our meat does not always have liver available either but he obliges us on special requests. But then my daughters will not eat it so only rarely do we make a mete chorchori these days.

Now though I love mete, it is the husband-man who makes a mean mete charchari, a dry goat liver dish with spices and potatoes. He would make it often when I was pregnant with Big Sis and had a condition that made me anemic. Among the various food that were suggested to boost up my iron and RBC, were beets, spinach and goat liver.

I naturally preferred the goat liver. I mean come on, who wouldn't eat "mete charchari" when the doctor prescribes it in not-so-many-words?

However he refuses to give out a set recipe. So I took pictures to wing it later.

Though we prefer goat liver and make this only with goat liver, you can follow the same recipe for chicken liver. I find chicken liver needs more spices than goat liver, so adjust spices according to your taste.


This is the cast of characters,

As you can see, you need,
onion chopped in slices -- 1 and half onion
tomatoes -- looks like only 1 tomato to me, 
potatoes in cubes, 
garlic paste -- 2tsp, 
ginger paste -- 2 tsp, 
and green chillies -- lots of them

And of course the star -- Goat Liver (I had 1lb of it)




Our butcher chops up the liver in small pieces so all we have to do when we get it home is wash well.

Marinate the goat liver with
Turmeric powder
Red Chili Powder
Garlic paste -- 1 tsp
salt
a tsp of Mustard oil
and leave aside for 30 mins.

Heat mustard oil in a kadhai or saucier

Add the potatoes. With a sprinkle of turmeric powder, fry the potatoes until they get golden brown spots. Remove and keep aside to add later.

Temper the Oil with
1 Tej Pata
a 2" cinnamon stick
4 green cardamom
4 clove

When the spices pop add the green chilies and onion. Fry until onion is brown and soft.

Next goes in the tomatoes, 1 tsp garlic paste and 1 tsp of ginger paste. Keep frying until the tomatoes are all mushed up and the raw smell is gone.

Now add the goat liver pieces and fry the liver at medium-high heat. You might need to sprinkle water in-between if you see the spices charring. Continue frying. This step is called koshano and will take some time until you see the liver pieces changing color to a deep brown.

Add the fried potato cubes and mix well. Add 1/4th tsp of Garam Masala powder and give a good stir.

Now add very little water and cover and cook. Cook until potatoes and liver is done.

It tastes best with ruti or parota. And of course rice.

Aam Pudina Grilled Murgi -- Chicken grilled with Mint-Green mango chutney



Yesterday was the dress rehearsal at LS's dance class. Being an Indian classical dance you can well imagine the lengths one had to go to, getting the child dressed. But this post is not about the dance so let us not deviate.

I usually drop Little Sis off at her dance class and come back to pick only later. Yesterday however I had to stay back to check with the teacher if the dress and get up was okay or anything more was to be done. The place was full of little girls all in traditional costume and their Moms. Mostly the parent/guardian was female so I assume it was the Mother except for one whose Dad was there.

Now on other days I see many Dads doing the drop off and pick up but yesterday it was mostly Mothers. I guess it was because they were in charge of the costume and make up for the child. Now this particular Dad who was there yesterday wasn't just doing a drop off. He had come armed with full knowledge of what his daughter's dress and makeup should be and was not afraid to ask questions. His daughter, a little girl of probably eight was beautifully dressed but was missing a couple of fake jewellery.There were a few other kids who were missing the same.

The teacher handed them the pieces and said it has to be secured with safety pins. Most of the Moms were clueless and did not have any safety pin on them. I myself had just bought a box of safety pins the day before and the box was tucked away at home.As we were looking around, this particular gentleman fished out a box of safety pins from his bag and fixed his daughter's jewellery. He then also took out some bobby pins and fixed her hair. When all was done, he shared a few of the safety pins with us too. I was really amazed at how well prepared and organized he was compared to moi. Maybe it his wife who had packed the bag, maybe it was his super organized nature but he seemed like a pretty good Dad to me.

The resident Dad is an all rounder and I often get to hear how my life is extremely easy as the Dad chips in.I am happy to see that there are more of his kind.
