Thakurbari r Beet Baata -- Beetroot paste

Though we get each and every vegetable around the year and at all times, every season I tend to gravitate towards those vegetables which were specific to that season  while growing up. 

Well, I make an exception when it comes to three of my favorite vegetables -- tomatoes, cauliflower and coriander leaves. These were very much winter vegetables in my childhood and even while waxing merits of seasonal eating, I am so very glad that now I can have them at any time of the year.

With veggies like Beetroot, I have seen I inadvertently end up buying and cooking more of this veggie in winter than summer. Similarly with Lauki or bottlegourd, which I am pulled towards in summer months but not so much in the winter.




So anyway, every winter, beetroot reminds me of 3 things, Yes the rule of 3 is ruling me today.
Bhejetebil Chop with grated beet and carrots, Beet Gajor er Chechki and a soup that my mother would make with big chunks of carrots, beet, thick slices of onion and potato sautéed in butter and then cooked in a pressure cooker with lots of broth spiced with whole black peppercons, cardamom and probably ginger.

No doubt I loved #1 and #2 but hated #3. I have tried to make that soup a couple of times as an adult and quite enjoyed it but I don't know why LS calls it "chemical jhol" and refuses to have anything to do with it!!

This time when I got beetroot, I wanted a quick easy recipe and found the Beet Baata in the slim book titled Thakurbari'r Ranna.  Now in contrast to popular belief, the recipes included in this book were not necessarily what was cooked in the Tagore Household, neither were they Rabindranath Tagore's favorite dishes.

This book is written by Purnima Thakur, daughter of Nalini Devi and Pramatha Chaudhuri. In the preface, the author very clearly says that these recipes are collected from a tattered recipe book handed down to her by her aunt, Indira Devi Chaudhurani. Indira Devi, the favorite niece of Rabindranath Tagore, had never entered a kitchen or cooked on a regular basis. But she was a connoisseur of good food and whenever she liked a dish that she tasted, she made sure to collect the detailed recipe from the cook and diligently note it down in her book. Purnima Tagore has also included some of her mother's recipes in the book. 

Surprisingly, never once in the book has the author mentioned a dish being cooked in the Tagore Kitchen nor anything about Rabindranath Tagore enjoying "beet baata" on a winter afternoon. She has very deftly and cleanly kept Tagore out of it and yet every time, someone cooks and shares a recipe from "Thakurbari r Ranna"  they want you to believe that the dish will make a poet of you.

If that is your intention, you have to skip this recipe. However you would be foolish to do so. From whomsoever this recipe of "Beet Baata" was collected, was a genius. It is the  easiest thing to do with beets and gives you way more value than the effort you put in.

Grilled Chicken with Sate Oil



I have been obsessed with this grilled chicken recipe and had to share it here. It is perfect for the summer. A little marination and a whole lot of flavor.

Usually I marinate my chicken with Indian spices for grilling. However that was getting kind of boring. The other marinades that the husband-man uses is bit bland for my taste and the chicken is not as juicy as I want to be. psst... he doesn't agree though.

Until...yes until last week...when this recipe changed my life and grilled chicken's.

The recipe is from Bon Appetit magazine, an annual subscription gifted by my lovely friend. I took two recipes of Chef Tom Cunanan and then made them my own.

First, I was blown away by the Sate Oil. This is very similar to the Chili Garlic oil that you get at Chinese or Thai restaurants.



Next was grilled Chicken where the chicken was marinated in a brine and that contained guess what ? SPRITE. Yes, sprite. The sweet-lemony and fizzy sprite did do wonders to the chicken. The aromatics (yes the author kept saying aromatics for ginger, garlic etc and I loved it) in the brine add a lot of flavor to the meat. The meat was also very juicy and did not become at all dry after grilling.

The original recipe of the grilled chicken called Chicken Inalsa, involved Acchiote Oil but I did not have it.

So, I grilled the chicken as per the recipes and then basted it with previously made Sate Oil. The best thing ever. That oil is amazing. Be liberal with Sate Oil if you wish to kick up the flavors. Serve grilled chicken with a simple salad, add it to pasta, or in a sandwich. It is delicious.

Potato Carrot Bean Sausage Soup -- soupy days






As Big Sis and Little Sis grow older I have been trying to have them responsible for some simple chores around the house. Both are very helpful in their own ways but when it comes to chores we have not been very successful to maintain a regularity. Like say Big Sis is responsible for folding her clothes and then putting them away. She does this diligently. But, yes there is a but, when once in two weeks, I randomly open her dresser drawers, clothes jump on me and spill out in a manner they should not. Big Sis would rather make scrambled eggs than fold her clothes.

Little Sis is much more organized when it comes to folding and organizing her clothes drawer. However she does not do it in a regular manner. She would rather pull a step stool besides me in the kitchen and roll luchis. Which is wonderful but someone has to do the other work too.

To start her on a simple job routine, I asked her to clean up the shoes that lie cluttered in the laundry/mud room at the end of each week. She did it with enthusiasm for a few weeks. Mind you I do not pay them for these chores so there is no incentive other than that of a job well done. After the first few weeks, Little Sis started forgetting about her chore in a pretty regular manner. I kept thinking she would get back to it. Nothing happened. Finally after a month I decided to remind LS of the chore that she was supposed to do every week. I also decided to imaprt some gyaan.

"LS," I said, "a chore is something you are responsible for. You cannot just do it one time and think it is done. You are supposed to arrange the shoes every week but I have not seen you doing it even once in the last month. What happened?"

LS looked at me and said "But I cannot do it."

"Why?"

"I have been fired from the job. Now I cannot do it anymore!"

And with that she moved on to live a life of leisure.

I wish, I could have clear reasons like that to skip all my daily chores and sit down with a book. But that will not happen. And I will make soup.

Every winter I find a new soup recipe that we love. I still make the old ones but some are clearly cooked more often than the other. Like this Tomato Soup wins hands down every winter. Sometimes we add crusty bread to it. On other days some basil pesto makes it a tomato-basil soup.



Then there is this Noodle Soup in Coconut milk. I call it a Khao Soi but it is not exactly a Khao Soi. Whatever it is, it tastes glorious.



This winter we found a new soup to love. I have a book of soup recipes which I bought from the library sale many years back and every winter I spend a good amount of time poring over the book. I end up making only a couple of them every year.

This year I decided to make this Potato Bean Sausage Soup and it was the best thing that could have happened this winter. It is much loved and even when I am making other soups the girls request this again and again. It is easy and I can make it pretty quickly in the pressure cooker. With some bread it serves as the perfect one-pot meal.

I am sure you will love it too.


I have simplified and added variations to this soup for my own good.

Firs we need a few vegetables.

I have used
1 potato -- peeled and chopped in cubes
1 large-ish carrot --- peeled and chopped in cubes
half of an onion
half of a fennel bulb -- chopped fine
2 cloves of garlic

Next we need a can of red kidney beans and some vegetable or chicken stock. If you don't have stock, don't fret, you can use soup bouillons or just plain water.

The star of this soup is of course sausage. I have used andouille chicken sausages. About 4 of them. Defrost and cut up the sausages.

First heat a tbsp of Olive Oil in  a pressure cooker.

Add the sausages and saute until they are browned. Remove and keep aside.

Now to the same oil add 2 cloves of garlic minced and half-of-an onion chopped. Saute until the onion is soft.

Add a tsp of Tomato Paste.

Add the potatoes and carrots and saute for a minute. If you have fennel you will add some of the chopped fennel bulb now. Saute for a couple of minutes.

Next add enough stock or water so that the vegetables are immersed. Add salt to taste.

Close the pressure cooker lid and at full pressure cook for 3 minutes.

When the pressure is released, open the lid. Now add the kidney beans and the sausage. Adjust for salt and sugar. Simmer until the flavor is well blended.

Serve with some crusty bread.

When I was a small child, I did not sing. Rather I assumed that "I cannot sing". It must have been a true assumption since years later when I tried to sing lullaby to my daughters, they protested and later told me to not sing when they are trying to sleep!

However my father, like all fathers, did not believe in my lack of singing talent as a 5 year old. He was a connoisseur of Rabindra Sangeet and though he himself could not sing a single note in key, he made it up by being an ardent listener. Rabindra Sangeet was the only music that played in our house in those days. The few Hindi songs that I heard were either over the neighborhood loudspeaker or on Binaca Geetmala on Bibidh Bharati. The only voices that boomed through our tape recorder was that of Debobroto Biswas, Suchitra Mitra and Kanika.

This overdose of Rabindra Sangeet at home, made me kind of detest Tagore's Songs. Yes, a blasphemy, but honestly I did not get most of the Tagore songs as a child. There were few like "Purano sei diner kotha" and "Aakash bhora surjo tara" which I really liked but most others, played day in and day out sounded monotonic to my ignorant ears.



As a result when my Father wanted me to learn Rabindra Sangeet, as most Bengali Fathers would, I protested. I said "I cannot sing", which might have been true but not something that could not have been worked on with some training. But I steadfastly refused any training and even with an opportunity to learn at Tagore's ChitraBhanu, I did not succumb to the pleasures of learning music. Even at the compulsory music class in school, I mouthed words, keeping my voice low, assuming that I cannot really sing.

Many, many years later, I kind of started appreciating Tagore's songs. I partly understood the words, the poetry and the music or at least I thought I did. My understanding was not even close to my Father's love for Tagore's songs but at least I realized why he might have wanted me to learn Rabindra Sangeet.

So, as most Bengali Mothers are wont to do, I enrolled my daughters in a Bengali music class.



I have always heard that most parents want to fulfill their wishes through their children. I thought it was a selfish thing to want. Now, I know, it is not always so. With their years of trudging through the swirling waters of life, when parents eventually realize what happiness those wishes and trainings could bring, they want to plant a love for that wish in their child's heart. So a parent who dropped out of school makes sure that the offspring gets to finish academics, the one who hardly practiced the piano and wishes she could play music for her own solace persuades her child to practice piano every day and the one who never learned to sing wants her daughters to sing.

It is not that we parents want our children to become like us, we think it will do them good to be what we aren't.



With that wish in my heart, I suggested gaaner school aka music school to my daughters. Of course my father has been subtly suggesting the same all along.I must say that I was lucky enough to find a music teacher in my neighborhood, who is not only fantastic but also knows how to work with kids very well. So once a week, after school, in the evening, she fills my daughter's life with music they don't hear everyday.She teaches them children's songs along with Vedic songs often interspersed with Rabindra Sangeet. The result is that both LS and BS look forward to their Friday Bangla Gaaner school where they go along with little friends they have known since birth.

For this Saraswati pujo, their music teacher has taught them Tagore's "Modhuro Dhwoni Baaje". And when these little kids sing this difficult Bengali song, pronouncing the words just right, my heart is filled with an unknown happiness.

My Dad was in tears hearing their rendition which I had sent him over e-mail.After all they are little kids, growing up far from Tagore's land and probably do not understand meaning of half of the words of this song. Their singing is not perfect but it is beautiful.

For my father, it is probably a wish come true.

Now back to this very Bengali Mutton Stew which LS loves. BS too loves the stew as long as she does not have to eat the mutton. She is turning into a vegetarian these days. In winter vegetables like carrots and beet makes this the perfect winter stew.

Usually I make the stew this way. But this time I followed the recipe for Leela Majumdar's "Brown Stew" narrated in her inimitable style, from her cookbook which I read more for the comfort it brings than recipes. This is truly the most heart warming soup you can make, with minimal effort on your part. It tastes best with mutton but is good enough with chicken too.

Prep

Though the recipe does not suggest, I always marinate my meat. Marinate Mutton/Goat meat in ginger paste, garlic paste, salt and a pinch of turmeric powder. I usually marinate all the mutton I get and then freeze in portions. For this stew I used about 10 piece of that marinated mutton (about 1 lb)

Wash and chop the following vegetables for stew
1 carrot
half of a large beet
2 small red potatoes in halves
about 8-10 string beans
a small portion of green papaya
half of a red onion
As the author says, do not overload this stew with vegetables. The vegetables should be in proportion with the meat you use.

Cook

Heat about 1 Tbsp of Vegetable oil in a pressure cooker

Temper the oil with
2 small Tej Patta
2 clove
2 green cradamom
a small stick of cinnamon
10 whole black peppercorns

When the whole spices sputter, add the mutton pieces. The  pieces should be in a single layer and not crowd the pan.
Saute at high heat until the mutton pieces are browned. If the mutton releases water, cook until the water is dried off and the mutton has lost its raw coloring. Take out the mutton and keep aside.

To the same oil, add the onion and fry for 2-3 minutes until onion softens a little.




Add all the other chopped vegetables, sprinkle salt and let the vegetables brown a little. It is not really necessary to fry the vegetables, just gently saute for a few minutes.

Next make a roux by mixing about 1/4th cup of flour mixed in 1/4 Cup Milk + 1/4 Cup Water(whole wheat atta or maida). Pour this and toss the vegetables around. The original recipe had suggested adding the flour along with the mutton but I add it with the vegetables

Now add the browned mutton pieces.

Add about 3-4 cups of water, salt to taste and mix everything with a ladle.

At this point add 2 fat clove of garlic chopped in slices and an inch of ginger grated. Add a tomato if you wish. Let the stew come to a simmer.

Close the pressure cooker. After the first whistle or once the pressure is built up, lower the heat and let the stew cook at low medium heat for about 10 minutes. After that raise the heat and cook for 5-6 more minutes. Switch off and let the pressure cooker release steam naturally.

Once the pressure cooker lid can be opened, carefully open the lid and check if meat is done. If not, you have to close the lid and cook for another 6-8 minutes.

If the meat is done, taste the stew and add freshly cracked black pepper and salt to taste. If the stew looks a bit runny, open the lid and put it on heat again to cook off some of the excess water.

Serve with a dollop of butter and with a piece of crusty bread or rice on the side..

Meetha Chawal -- Sweeten your Durga Pujo




Before we go into anything let me just clarify that Meetha Chawal or Sweet Rice is not a Bengali Dish.

It very well could have been given how much a Bengali loves her rice and sweet.But the point of the matter is it is not. I guess this whole dish passed a Bong by and I am sure if he or she, the Bong that is, had any inkling of this dessert it would have been christened "Mishti Modhur Bhaat" and be a staple dessert to be served during Pujo and Bijoya. After all it has rice and sugar. What else doe one need ?

Me, for myself, first had this at a party last year where it was cooked by a Punjabi colleague's wife. It was exquisite. Long grains of rice sweetened with sugar and loaded in kaju and kishmis with a fragrance of ghee and saffron hanging around it. His wife was a good cook and I was sure it was a pretty difficult dish to cook involving hours of sweet labor.

Turns out Not.

Turns out it can also be done in the Microwave. Now to make larger portions, the stove top might be a better option but for small quantities I found the Microwave is perfect.



Durga Pujo starts this Saturday. Navratri is already in full swing. I haven't been able to take a breather to glance around and realize that. Adjusting to the new neighborhood, BigSis's new school and boxes to be opened and stowed away at every corner is taking up all our time. But somewhere in my being I do have a feeling that halfway across the globe, life is not as mundane and tiring as mine, as preparations to welcome Devi Durga have reached a crescendo. It is not that I miss it terribly and I am kind of relieved that I do not need to push aside crowds at Baagbazaar or College Square to have a glimpse of the protima but some days, sometimes, when the chores get heavy and the day drags on I want to be back there oblivious of BS's homework or my long drive or LS's nasty cough brought on by the October cold or one more box that needs to be opened and stored away.

But since that is not going to happen let us share Mishti instead, easy ones, quick ones, the ones that are doable in your new Tangail or whatever saree you have bought this year

It is through this that I send you all happy wishes on Navratri and Durga Pujo. May you find joy in the path you seek and may the path sweeten lives around you.



And now to the recipe of Meetha Chawal in the microwave which I made following this recipe from Tarla Dalal's site. 

Soak 1/2 cup of long grained Basmati Rice in water for 20-30 mins

In a microwave safe bowl with flat bottom add 1 tbsp Ghee. Microwave at full power for 1 min

To above add 4 green cardamom, 2 clove, a 2" stick of cinnamon. Microwave again for 1 min.

Drain rice and add to the bowl. Mix so that the rice grains are coated with ghee. Microwave for 1 min.

Now add 1 cup water + 1/2 cup Milk to the bowl and mix with the rice. Add few strands of saffron. Microwave for 10 mins at 5 minute intervals i.e. take out after 5 min, mix and microwave again

By 10 mins the rice will almost be done. This will depend on quality of rice as well as power of microwave. If not done continue for 5 more minutes till rice is almost done.

Now time to add little more than 1/4th cup of sugar. Take out the rice and check if there is little water in there. If completely dry dissolve sugar in little water and then add, else just add the sugar. Mix with rice.Microwave for 2-3 more minutes

Meanwhile saute cashews and raisins in ghee on the stove. Once the rice is done mix the kaju and kishmis with the rice. Serve hot.

Chicken Keema Pakora -- fasting or feasting

It was one of those days that deserve some deep fried love. I am not exactly sure what kind of exact day it was but it must have been pretty worthwhile to deserve pakoras being fried in bubbling hot oil.

Could have been the day, LS took the plunge and rode the bicycle with the training wheels. From three wheels to four, two of them in training waiting to be taken away.

Could also have been another one where she found her knee pads and elbow pads so overwhelming that she refused to ride the bike at all. "I don't want to ride anymore", she decided.

Could have been when BS after many, many days of tearful practice of the same piano piece over and over again, found her reward that only hard work can bring.

Could have been when I learned of "gentoo penguins" from a smart 6 year old as we painted pottery on a cold day.

Could have been the day a flower bloomed.

A leaf fluttered.

The rains splashed.

And nothing happened.

It could have been this day or the other but there must have been something to make me heat a kadhai full of oil to bubbling.

This recipe was adapted from Sanjeev Kapoor's recipe on YouTube. I don't know if there is some divine intervention that I happened to post these keema pakoris on Ramzan when it was indeed adapted from Khana Khazana's Ramzan Special. I have also modified the recipe according to my Chicken Meatball recipe where the breadcrumbs give amazing soft results. This is a simple enough recipe to follow if you have minced meat at home and is a sure fire entertainer.

 Chicken Keema Pakora

Chicken keema -- 1 lb
Onion -- 1 small finely chopped
Ginger-Garlic Paste -- 1 tsp
Cumin Powder -- 1/2 tsp
Coriander Powder -- 1/2 tsp
Red Chili Powder -- 1/2 tsp (I don't add this)
Garam masala -- a pinch
Salt -- to taste
Green Chili -- 4-5 finely chopped
Lime Juice -- 1/2 a lime
Freshly chopped coriander -- a fistful
BreadCrumb -- 1/4 cup
Egg -- 1
Besan/Chickpea flour -- almost 1/2 cup
Vegetable Oil -- for deep frying

Mix all the ingredients together adding the egg and besan only towards the end. Fashion small balls out of the mix.

Heat enough oil for deep frying. Drop the balls in the hot oil. Reduce heat to medium, slowly fry the balls so that the keema cooks. When both sides have turned golden brown, raise the heat and fry for a minute till it turns crispy.

Take out with a slotted spoon and drain the oil on a paper towel. Serve hot with some spicy chutney.

Tel Koi -- tale of fish

When the parents are here we eat a lot of fish. Almost everyday.

Mostly it is the sweet water familiar fish from back home which we get from our Bangladeshi grocers. Rui, Ilish, Koi, Pabda. The fish is rock solid, frozen and 12 years back I would have never believed it tastes nice in a halka jhol. If you are unsure about such stuff I would suggest you do your own evaluations and not make it a staple diet. My Indian doctor had suggested I fry it at high temperature before proceeding with the gravy. I guess she had meant the fish should be fully cooked which I do.

The fish feeds my nostalgia perfectly and makes my Mother think a six month stay in the US  is not exactly same as living in Mars. At least "maach paoa jaay". So a day before the flight lands and a couple of times in between we make our trips to the Fish Store. Having chosen the huge 7 lb fish we ask it to be cut. "Bengali Cut" we tell or "Double Bengali Cut" on days we are being thrifty. Believe me such terms do exist. The dull looking metallic blades starts off with a screeching sound chopping off perfect heart shaped pieces of fish. That sound makes me very queasy and I cover my ears. I try to muffle the sound; titillating my mind with images of an oil slick rui kalia and rice instead.

At other times we buy our fish from the Asian Stores; the one with the aquariums and strange fish names. Bass, Carp, Trout, Smelt, Whiting, Tilapia -- Tilapia the familiar one -- the one Baba would actually ignore in the bustling fish markets back home and the one which looks a very distant cousin of Tilapia from those days. Here no one understands "Bengali Cut". I choose a fish and then in extremely ridiculous sign language tell the fish monger to cut the fish in steak pieces , an inch or more thick. "Wanna head?", he asks in passable English. I nod vigorously. My parents are happy with this fish too. They like the Bass, the Rainbow Trout, the Tilapia. The Buffalo Carp is almost like a Katla, my friend says.

Once my parents have gone back to their own surround where they can buy fresh fish everyday and watch Star Jalsa, my daughters and husband revert back in auto-pilot to filet of Tilapia and Salmon from the American Superstores. None of them care for the fish my parents and I had happily devoured. A name dropping of Rui, Ilish or Koi does not light up their eyes or palate. I try to live in the past waiting for next year when I can utter phrases like "Double Bengali Cut" without flinching a single eye lash.

This time when my Ma was here, which is around February, we got Koi maach. Not the ornamental "Koi" that you would keep as a pet and call "Hey Fishy Fishy". Oh and I must tell you when I first saw a Koi pond in one of the nurseries here I was naively happy thinking that they raise our dear old Koi maach.

The Koi I am talking about is also known as climbing perch and belongs to a family of carps.It is a sturdy little fella and can live without water for quiet a few hours. I am usually pretty scared of Koi with its hook like sharp bone and have cooked it only a couple of times. The Koi in packets that I get here is fully cleaned and that gives me much confidence. I made a Tel Koi this time and though Ma was here I picked the recipe from Bela De's Bengali cookbook and cooked it myself. It was pretty good. I repeated a similar curry with a fish called whiting later and with enough Mustard Oil that tasted good too.

Honestly I am confused. Is it the fish or a surfeit of Mustard Oil that I fell in love with in this dish? Guess one complemented the other.



Tel Koi -- Koi Fish in Mustard Oil 
Wash and clean koi maach(about 4 small ones). This can get tricky and I suggest you ask the fish seller to do the bulk of this so that all you need to do at home is give a good rinse.

Rub the fish with salt and turmeric powder and keep aside for 20 mins.

Heat enough Mustard oil for frying the fish in a kadhai. Fry the fish till it is golden brown on both sides. remove and keep aside.

Now temper the oil with two Bay leaves and 3 slit green chili.

Make a wet paste with
1/2 tsp of turmeric Powder
1 tsp of fresh ginger paste
1/2 tsp of red chili powder

Add this to the fry pan and saute at low heat till oil seeps out of the masala.

Now remove the pan from heat and add 2 tbsp of yogurt (the yogurt should not be lumpy and beat with a fork before adding). Mix well with the masala.

After a minute put the pan back on low heat and cook for a minute.

Add a cup of water, 3 more green chili slit through, salt to taste and let the gravy simmer to a boil.

Once the gravy is boiling add the fish pieces. Cook till you see the oil surfacing. Drizzle a little mustard oil on top and serve with white rice.

Ajwain wali Chicken --Chicken with Ajwain

When I was younger, nubile(not), nymph like(not) I adored guys who wrote mushy love letters and chose white befuddled pigeons as their choice of courier. Mailman were passe. In between they would have saved the world, brought justice, developed six packs and delivered hot kisses.

Now I am in love with Dads who stay calm, rock solid and raise foul mouthing hormonal girls, trying to bond with them without losing an oz of coolness while in the background a wife who has been unfaithful is dying.(The Descendants)

Compared to the latter, the former looks like cake walk.

When I was younger, nubile(not), nymph like(not) I never thought of ajwain as anything but an after meal digestive which soothes a tummy that has had too many kochuri or alur chop or phuchka as the case maybe.We called ajwain -- "Joan"-- not "Joanne" mind you.We bought sachets of spicy and dusty "joan" on local trains in anticipation of a heavy meal. We drank Joaner Arok (also known as Aqua Ptychotis) in gulps after every wedding reception and talked of it with as much reverence as reserved for Joan of Arc. Ajwain or "joan" was then intermingled with our life---only in a different way.

Now I use ajwain for making a chicken.It was an accident, a stupid one, the ajwain. I used it to temper the hot oil in which the chicken will be cooked. I nodded at the sharp, strong taste that a teeny spoon of that seed can bring. I won't say I am in love yet. But it is a different beginning for sure.

Now let me tell you about the stupidity. I adapted this recipe from Anjum Anand's "Sindhi Lamb Curry" which uses Caraway seeds aka Sha jeera. In a rush I read it as Carom seeds aka Ajwain. I hesitated a moment wondering whether I should go ahead but then I took heart from the delicious looking kadhai jhinga cooked with ajwain and went ahead.I spiked up the hotness, used chicken and just called it ajwain wali chicken.

By the time I realized that the recipe had neve ever asked for Ajwain, the deed had been done and a new recipe born. For the original recipe replace the Ajwain with Sha Jeera.

Make a paste of
5 cloves of garlic
1" of ginger
5-6 hot green chili

In a bowl marinate almost 2lb of skinless chicken pieces with
1/4 cup yogurt(well beaten)
1&1/2 tbsp ground coriander
1/2 tsp carom seeds/ajwain
5 green cardamom ground
ginger-garlic-chili paste
salt

Heat 3 tbsp oil for cooking in a saucier

Temper the oil with
1/2 tsp of carom seeds/ajwain,
4 dry red chili crushed,
1 small bay leaf,
1 black badi elaichi
and 5 green cardamom
lightly crushed.
Now add about 2 cup of sliced onion and fry till onion is golden. Next add 2 tomatoes finely chopped. Add about 1 tsp of Red Chili powder. Add little salt. Cook till tomatoes are all mushed up and oil starts separating from the masala.

Next add the chicken along with the marinade. Fry the chicken for at least 20 minutes at low-medium heat till you see the chicken has lost its raw color and has started browning. Now sprinkle a little water, add salt to taste and cover and let chicken cook. Remove cover and stir in between. Do not add any more water.

Once the chicken is cooked, remove cover and continue frying the chicken till the masala releases oil on the surface. Add fresh cilantro, a squeeze of lime juice and serve.

I have never admitted this before but I think on some days, I expect a lot from BigSis. With the little one throwing her signature tantrums, the Dad having fun with erratic schedules and my PMS stretching to a month, I forget that BigSis is only a 7 year old. And a very mature, good hearted 7 year old at that.

If I think of my 7 year old self, I remember nothing. On trying hard I see a shy girl who thought "Ekkuze Me" translated to "going to pee". Yes, I was that dumb.

Fast forward to BigSis who in spite of having her moments is such a huge help when she sees Mommy has too much to do. She packs her lunch bag with her snack the night before, fills up her water bottle for school, dresses herself in the morning without much help, does all her homework without being asked to and acts pretty responsible most of the time.

She is also extremely generous with her stuff and doesn't complain much if LS scribbles a horrific A on the pages of her brand new diary. She eagerly shares everything with her little sis(who btw finished her didi's box of tic-tacs hiding behind a couch) and if I give her a chocolate for snack at school, she brings that back to split with the sis.

She even wrote a limerick about her sister

My sister was very very small
All she could do was craw and crawl
Now she can walk
Now she can talk
And she does not remember that at all

The biggest help in the last few days has been letting LS sleep in the crook of her arms at night. For that I can tuck them in and come away to finish off my work. Else I would be lying there for all of 30 to 60 minutes and praying to the Universe while LS tossed and turned.

And yet when she gets buttons of her sweater wrong, skips her piano practice and climbs on her Dad's shoulders, we tell her "Tumi ar boro hole na(you haven't grown up at all)", always forgetting that she is only 7 after all.

I made this Goan Shrimp Curry on a recent weeknight. Don't ask me why I would do such things but things happen. I based this on the Goan Chicken Curry from Anjum Anand, but since that was pretty mild I hiked the Red Chili in this one. If you are a wimp when it comes to Red Chili, go with the alert and stay safe.

Also inspired by a recipe of Shrimp Curry my sis-in-law had sent, I used Coconut Milk to make the gravy and added few Curry leaves for flavor. That totally took the taste to a whole new level. It was creamy, rich with a lightly sweet coconut taste and bursting with flavor. Everyone who had it loved it. It tasted very close to the Bong Prawn Malaikari and you realized how Coconut smudges borders.

I called it Bong Mom's version simply because there are so many variations out there and I am no Mario Miranda to vouch for its authenticity. I insist that you make it this Saturday, that is tomorrow, come on now.

Goan Shrimp Curry


Make Goan Red Spice Paste

5-6 Dry Red Chilli(Heat Alert: Go with 2 if you have a weak palate)
1 tsp Roasted Cumin Powder
1 & 1/ 2 tsp Roasted Coriander Powder
3 cloves
6 black peppercorns
1& 1/2" piece of cinnamon
9 large cloves of garlic peeled
1 tsp tamarind paste(skipped)
1/4 tsp- 3/4tsp sugar (according to your taste, you can skip too)
3/4tsp salt
a splash(1-2 tbsp) of white vinegar
Put all of the above in a blender jar and make a paste with minimum or no water added.

Note: Instead of the Roasted Cumin and Corriander Powder you can use same amount of Cumin & Corriander seeds.

Prep Shrimp

Peel and devein shrimp Or buy a pack of raw de-veined shrimp

Toss 20-25 shrimp in salt and little turmeric powder and keep aside for 10-15 mins.

Go make the Shrimp Curry

Heat White Oil in a large saucepan

If you are frying the shrimp, saute them now till they turn a light shade of yellow. Remove and keep aside.Note: You can also add the raw shrimp to the gravy and cook it later

To the same oil, add 1 large onion sliced or chopped fine and two hot Indian green chili sliced, cook until browned.

Add the Goan Red Spice paste and cook for 5 minutes. Your nose might tingle with the sharpness of the chili.

Add 1/2 of a large tomato chopped, salt to taste and cover and cook until the tomatoes have softened and reduced. Uncover the pan and cook the tomatoes further in their juice for 6-8 minutes, stirring in between till you see oil separating from the masala.

Add about 1 cup of unsweetened thick Coconut Milk + 2/3 cup of warm water. Throw in a few curry leaves. Add salt to taste and adjust for sweetness, hotness etc.. Let the gravy come to a boil.

Add the shrimp. If the shrimp is already fried cook for a couple of minutes at low heat till the gravy thickens. If the shrimp is raw, cook till shrimp looses its raw color and looks pinkish-white and cooked. Note: Too much cooking will make the shrimp chewy and rubbery so there be careful

Remove from heat, cover and let it sit for 40-45 minutes. Warm and serve with White Rice. It is superbly delicious.

Red Goan Chicken -- from Anjum's New Indian

In the last couple of weeks, I have been in deep s*** where time and work is concerned. There is loads of work and very less of time. I don't know how I got myself into this situation but I really want to go and live in Venus with its longer days.

On top of all this the husband will have to move to a work location, beyond everyday commutable distance and so he intends to do a Mon-Thur which essentially leaves me in sole charge of two tiny human beings and their music/taekwondo/swimming/studies/tantrums/fun-moments/life for whole 72 hours and some.

Yeah, yeah M Didi is still around but really not of much help in the evenings. She is not one of those enthu, proactive people you hate at work. She believes in taking things slow, real slow and relaxing a lot which is a mighty good work ethic I must say.

In between all this I have been doing my usual cooking because I feel one of the many purpose that God had in mind while putting me on earth involves offering healthy home-cooked meal to my kids. Yeah, I am a believer that way. But since I have very very little time I cannot go into the details.

Also due to lack of good ol' time, I cannot tell you how embarrassed I am that I did not do a review of Anjum's New Indian(author Anjum Anand) which I received 2 months back. Or say that how beautiful her book is with lush pictures of food. Or how gorgeous, calm and composed she looks hovering over the big pot, very unlike my harried, sweating self over similar pots. Or how her book has nice simple recipes plucked from all around India and then tweaked for the New Indian, whoever he is.

Only thing I can tell you is this Red Goan Chicken Curry from her book is fabulous. The kind that would make you say "De la grandi mephistopheles", like Tenida. I will put down her exact recipe here and then in the Notes I will tell you what all changes I made. Yes, I can never ever leave a recipe unchanged, what can I say ?

Red Goan Chicken Curry

Make Goan Red Spice Paste

2 large, mild, fresh red chilies, desseded
1 tsp Cumin seeds
1&1/2tsp coriander seeds
3 cloves
6 black peppercorns
171/2" piece of cinnamon
3/4 tsp ground turmeric
9 large cloves of garlic peeled
1 tsp tamarind paste
3/4tsp sugar
3/4tsp salt
1/3 cup white vinegar

Note: I skipped the Tamarind. Used 2 dry red chili, did not deseed.

Make Red Goan Chicken

Note: I started off by marinating 1&1/2-2lb of chicken pieces in 1 tsp of ginger paste, 1 tsp garlic paste, salt and 1/4tsp of turmeric. This is not suggested in the book. Anything under Notes is not as per the book.

Heat 4 tbsp Oil in a large saucepan

Add 1 large onion sliced and cook until browned around 10 minutes.

Add 4tbsp of Goan Red Spice paste and cook for 2-3 minutes

Add 4 large tomatoes chopped, salt to taste and cover and cook for 10 minutes or until the tomatoes have softened and reduced. Uncover the pan and cook the tomatoes further in their juice for 6-8 minutes, stirring in between till you see oil separating from the masala.
Note: I used only 1 large juicy red tomato

Add the chicken pieces(1&1/2lb chicken skinned) and stir well in the pan for a few minutes.
Note: I did this until the chicken pieces were lightly browned

Add 1 cup of water, bring to boil and cover. Cook covered till chicken is done.

Remove the cover, turn the heat up and boil off excess moisture in the pan, tossing the chicken in the reducing gravy all the time. Also check for salt and seasonings and adjust.

Note: This dish was pretty mild and perfect for us and the kids. I would increase heat up a notch by adding a little red chili powder otherwise. I also garnished the dish with some fresh chopped corriander.

Mutton Rogan Josh -- any which way





Last week when I decided to cook Mutton Rogan Josh I found that it was as disputed as Park 51 if not more. There were several manifestations of the dish depending on where you came from.None radically different from each other but differing in subtleties that was enough to cause mayhem. Every one looked down upon the other Rogan Josh and there was much confusion about the authentic version.

For all you know Rogan Josh could be God.

From the several sites I visited I could narrow it down to the following.
Not God, Rogan Josh !

1. Authentic Rogan Josh -- This is the version created by the Kashmiri Brahmins, a clan who ruled India after the Mughals and Brits. Kashmiri Brahmins have the same food philosophy as Bengali Brahmins and are happy to eat meat as long as it is made satwik way with no onion or garlic. This version of the Rogan Josh has no onion or garlic but has Hing/Asafoetidia. The red color of the dish is brought by a root known as "Ratan Jot" found only in the Kashmir Valley. 2. British Indian Rogan Josh -- This is the version created by HaraCurry Singh Patak in Glasgow, UK. This version was cooked like any other mutton dish with onion, garlic, ginger and tomatoes in the small galley kitchen but was given a brand new name. It was made mild so as not to upset the Brits who loved curry and HaraCurry. Soon it became popular among Indians and non-Indians living abroad and depending on the heat tolerance quotient(HTQ) of the clients the dish was made Red with Red Chili Powder, Red with Kashmiri Mirch or Orange with Food Coloring, the last being the most popular.

3. North Indian Rogan Josh -- Exactly same as British Indian Rogan Josh, made popular in Delhi by HaraCurry Singh Patak's second cousin Dhaba Singh Telwala. The cousins share the exact same recipe and this version only differs in the amount of oil floating on top of the dish. Grease being not a problem in India and available cheap the chef uses all kinds in this dish.

4. South Indian Rogan Josh -- This recipe was a novel creation by Swami Idli Iyer who had fallen in love with this dish on his tryst with the Brits in the late 1940's. Swami never told his mother Rasam Amma that he ate meat, smoked tobacco and never took his meals at Chennai Tiffin while in London.Instead he told her Rogan Josh-a was made with Jackfruit and was offered as Prasadam at the Balaji temple in UK. His version has fragrant curry leaves and grated coconut and is popular in Udupi restaurants.

5. Bengali Rogan Josh -- This version was created by Mishti Kumro Mukherjee who on her visit to Delhi was as impressed by the height and physique of the Punjabis as she was with the Red Fort. She took to feeding her "roga"(thin) son Rogan Josh every day at lunch since she felt that is what made the Paanjabi "mota"(fat translates to strong in Bengali) and not "roga" and also gave them "Josh"(fame & money). She added a good amount of sugar to this dish to make it mishti and marinated the mutton in mustard oil. No news of the son was ever reported.

6. Madhur Jaffrey Rogan Josh-- Whether this version was created by Madam Jaffrey, her mother's cook or a cook at Sitar I cannot tell. This version has onion and garlic but no tomatoes. It is made by people who blog and are not sure of what is the exact way to make Rogan Josh. The recipe is from here and it says Preparation Time :0:00, whatever that means.

*Recipe Number 2 to 5 are partly figments of the author's demented mind who has lots of time on her hand today. They do exist though.





If I am honest and look deep down in my heart and squint through the arteries, blood vessels, muscles and whatever they have there I should tell you that I wanted to make Rogan Josh as per Recipe Number 1. The only reason why Number 1 tilted my favor is it does not have onion. I can go any lengths to not chop an onion. I am lazy that way.

However I was supposed to take the mutton dish to a Bong Picnic and anyone who has been to a Bong Picnic knows how important a role food plays there. Bongs do not play badminton, antakshari, cricket or dumb charade at Picnics. They eat and chat and eat in a vicious cycle. I couldn't take risks at such a place. I have never cooked mutton sans onion & garlic. If my mutton dish faltered, I could as well be ousted and denied the Luchi, Alur Dom, Lyangcha which also featured on the menu. So I chose recipe Number 6, simply because of the brand name which backed it.

Recipe Number 6 was actually great. Even the measures worked perfect. I however added Fennel seed Powder from Recipe 1 to this one because I thought it would give this dish the unique flavor. In the end it was not a whole lot different from any other mutton curry but it definitely was one more great mutton curry. Go cook your own version of Mutton Rogan Josh or just follow this one. If you don't eat mutton substitute with chicken or jackfruit(kathal), really.

Mutton Rogan Josh



This is an easy dish to cook and the only factor is time taken to cook the mutton. Do not use pressure cooker to cook the meat, the flavor comes out only on slow cooking.

What You Need

Mutton(Goat meat) or Lamb ~ 2 &1/2 lb, shoulder or front leg cut in medium pieces
Marinate the meat for 2-3 hours in 1 tsp ginger paste, 1 tsp garlic paste, 2 tsp vinegar or lime juice, a little turmeric and salt

For Gravy

Fresh Ginger peeled and chopped ~ 2"
Garlic ~ 8 fat cloves

Onion ~ 2 cups finely chopped

Yogurt ~ 6 tbsp

Salt
Oil for Cooking

Spices in Gravy

Cumin powder ~ 2 tsp
Corriander Powder ~ 1 tsp
Fennel Seed Powder ~ 2 tsp
Kashmiri Mirch ~ 1 tsp or more to get the coloring
Red Chili Powder ~ 1/2 tsp to start and then to taste

Pepper powder ~ 1/4 tsp
Garam masala ~ 1/4 tsp

For Tempering

Green Cardamom/Choti Elaichi ~ 6-8 pods
Black Cardamom/Badi Elaichi ~ 2 pods
Bay Leaf/Tej Patta ~ 2 small
Clove/Laung ~ 6 whole
Whole Black peppercorn/Kali Mirch ~ 10 whole
Cinnamon/Dalchini ~ one 2" stick
Mace/Javetri ~ 1/2 tsp

How I Did It

Marinate the mutton as instructed for 2-3 hours in 1 tsp ginger paste, 1 tsp garlic paste, 2 tsp vinegar or lime juice, a little turmeric and salt

Put the ginger, garlic and very little water in a blender and blend well into a smooth paste.

Heat White oil in a wide, heavy pot over a medium-high flame. Add the meat in a single layer and saute till they are browned. Add a dash of Kashmiri Mirch while frying the meat. Remove and set aside.

Temper the same oil with all spices listed under tempering. Wait a few seconds for the spices to sizzle.

Now add the onion. Fry the onions to a medium brown color.

Add the ginger-garlic paste that you made and saute for the next minute or so.

Now add the dry spices the Cumin Powder, Corriander powder, Fennel powder, Kashmiri Mirch and red Chili Powder. With a sprinkle of water fry the masala till you see oil separating from the edges.

Now add the browned meat cubes along with the meat juices. Mix well so that the meat is coated with the masala. Now lower the heat and put in 1 tablespoon of the yogurt and stir and fry for about 30 seconds until yogurt is well blended. Add the remaining yogurt, a tablespoon at a time in the same way. Stir and fry for another 3-4 minutes at low heat.

Add 1&1/2-2 cups of water and salt to taste. Mix everything well, scraping the sides and bottom of cooking pot. Bring the gravy to a boil.Check to see if salt and red chili powder is in correct amount. If you need it more hot add more chili powder.

Cover, turn heat to medium-low and simmer for about an hour or two until meat is tender. Every 10 minutes give the pot a good stir to prevent burning. If the gravy is becoming too dry add some more water.
When the meat is tender, take off the lid, turn the fire to medium high and boil off some of the excess liquid, stirring all the time, until the sauce is thickened.

Sprinkle the garam masala and black pepper over the dish and mix them in just before you serve it.



Trivia: Rogan means oil in Persian, while josh means heat, hot, boiling, or passionate. Rogan josh thus means cooked in oil at intense heat. Another interpretation of the name rogan josh is derived from the word rogan meaning color and josh meaning passion, hot or red. So this is a meat dish which is red in color.

Doi Murgi -- Dahi Murg




She wanted to make Dahi Murg today. From that Madhur Jaffrey book sitting on her dresser. The one she had checked out from the local library three months back and never renewed or returned.

The book was a treasure of good life made better with excellent food. She wished she had that kind of life, the kind spiced up with green mangoes sprinkled with red chili powder, the one rich and sensuous like the Chicken korma on Page 123, the flirty kind with a dance or two and spicy bazaar wale aloo on the side.

But no, here she was doing her second laundry of the day, while folding the first neatly. Then she had to clean the kitchen, the breakfast mess from morning and vacuum the family room. By 9 she had to be out to her job where all she did was sit in a small cubicle and enter data on a dumb screen. 8 hours of that sterile environment and her was numb by the time the clock said 5:30.

The only interesting part of the day was the half hour lunch break when she could sample Cathy's ravioli, Sujata's rawa idli and discuss Ingrid's non-existent love life. The days the girls praised her aloo-paratha or drooled over her butter chicken life seemed a lot better though. Her kohl bereft eyes shone as they praised her cooking prowess.

They would ask her the recipe in details. How many onion, chopped or sliced, paste or not, red or white... so many questions. She would preen secretly and patiently answer. Her voice glided from dull to sensuous while explaining the onion's color and shape. With a sparkle in her eye, she could go into details about how exactly the oil separating from the masala should look and what it meant to beat an egg white to stiffness.

Today though nothing like that happened. No one said a word about her aloo-gobi. Instead they praised the Swiss chocolates Ingrid's boyfriend had got. She finished her lunch in a short fifteen minute span and went back to sit in front of her screen. "No point talking to these girls and wasting time", she thought to herself . She would rather go home 15 minute early and start on that Dahi Murg.

It was almost dark by the time she returned home. After school, she had to take Nutan for karate and Rakesh for his ballet lessons. Everyday there was some chore or other to be done after work and finally when she could plonk herself on the couch with a cup of tea she would be totally out. Today she sat at her exact spot, her back resting against the arm rest, her feet stretched out, her fingers flipping through Jaffrey's "Climbing the Mango Trees". Yes, there was Dahi Murg, Chicken in a Yogurt Sauce on Page 134. She read and re-read the one page recipe, raising a eyebrow there, furrowing a forehead here.

"10 cloves of Garlic. Ahhh, now that sure is much. What was Madame Jaffrey thinking ?", she called out loud. The children used to such ramblings didn't turn a head and continued their work.

"Some Kasoori Methi would deepen the flavor in this dish, I am sure. And cashew paste, yes that would be perfect. I will see how Sujata will ignore my Dahi Murg tomorrow", she said with a steely determination in her voice.

She then flipped her phone and pulled up the Address Book.

D -- for Desi Khana...naah they don't do non-veg.

G -- Ghar ka Khana ...their aloo-gobi today was a total failure.

H -- Hardeb Home Delivery...now this was a guy who could deliver. His Shahi Egg Masala on Tuesday was so delicious that Cathy had asked in an incredulous voice " How can you cook such difficult dishes after a long day ?". She had smiled and doled out Cathy some more of the Masala.

She quickly pressed Hardeb's number. Hardeb on the other side was clearly pleased to hear his regular and connoisseur customer's voice.

"Dahi Murg? Sure Madam. Tomorrow by 8 we will deliver at your home", Hardeb's greasy voice said. "Yes, yes, Kasoori Methi and Cashew paste Madam. No, no Kari Patta.Sure Ma'm. Thank You Ma'm"

She took a deep breath. She could smell the slender sticks of cinnamon and the dark, rough, tiny peppercorns dancing in the hot oil. The Dahi Murg was going to be lovely. Hardeb had never failed her.

Tomorrow she would explain to Sujata what exactly needs to be done so that the Dahi, the Yogurt does not break in the gravy.

My Ma used to make a Doi Murgi -- a Chicken in yogurt sauce, long time back. Her recipe was based on the Doi Maach. I somehow never made it. Many years later I saw a Dahi Murg in Jaffrey's book which reminded me of my Ma's Doi Murgi. In between these episodes, Bong Working Mom had mentioned a Doi Murgi/Doi Chicken in her comments which I vaguely remembered.This recipe is an amalgamation of all the above recipes. I loved the addition of Kasoori Methi that BWM introduced and I really think it adds a wonderful flavor to this dish. You can skip Kasoori Methi and Cashew for Madhur Jaffrey's version.

Doi Murgi -- Chicken in Yogurt Sauce


What You Need

Chicken ~ 2lb--3 lb. I buy a whole small chicken which is almost 3lb, after removing skin etc. the weight would be around 2-2&1/2 lb I think.

I have given a range for the garlic, ginger etc. because I think it depends on individual taste. The original recipe suggests about 20 clove of garlic. Now my garlic cloves are much fatter than the ones I have seen in India so I think 4 fat ones is fine for me in this dish which has little gravy and in which I didn't feel the need of too much garlic. You are free to improvise.

For marinade

Ginger paste ~ 1 tbsp
Garlic paste ~ 1tsp
Corriander powder ~ 1 tsp
Cumin Powder ~ 1 tsp
Garam masala ~ 1/2 tsp
Turmeric Powder ~ 1/2 tsp
Yogurt ~ 1 tbsp
Salt to taste

For Gravy

Onion ~ 1&1/2 -- 2 cup of chopped red onion OR 1 large US size red onion
Garlic ~ 4-5 fat ones
Ginger ~ 1 heaped tbsp of chopped Ginger

Yogurt ~ 1 cup
Cashew ~ 1 tbsp

Kasoori Methi ~ 1/2-1 tbsp
Kashmiri Mirch ~ 1/4-1/2 tsp (depending on taste)
Red Chili Powder ~ depending on taste

For tempering

Cinnamon ~ 2" long & thin stick
Clove ~ 5
Cardamom ~ 5
Whole Black Peppercorn ~ 8-10

How I Did It

Marinate the chicken for 30mins to an hour with all ingredients listed under marinade.

Heat about 3 tbsp of Oil in a heavy bottomed pan or kadhai. Temper the Oil with
2" thin stick of Cinnamon,
5 Clove/Laung
5 Green Cardamom/Elaichi
8-10 Whole black Peppercorn

Add about 1&1/2 -- 2 cup of chopped red onion and fry the onion with 1/2 tsp of sugar till onion is soft and browned on the edges.

Make a paste of
4-5 fat cloves of garlic 1 heaped tbsp of fresh chopped & peeled ginger 2-3 green chili(optional) very little water

Add this paste to the pan and saute for 2 minutes, sprinkling water if necessary.

Add the chicken pieces shaking off any excess liquid and fry the chicken pieces till they are lightly browned. Let it cook uncovered at medium heat for the next 10 mins or so, with frequent stirring. You might need to add a tbsp of oil at this stage. This process of stirring and cooking is actually called "bhuno" in Hindi or "kashano" in Bengali. At the end of this process you will see the oil separating , that indicates good things are in the making.

Now add
1/2-1 tbsp of Kasoori Methi crushed between your palm
1/2 - 1 tsp of Kashmiri Mirch(or Red Chili Powder)
Saute for 1 more minute

Take the pan off heat and wait for a minute. Meanwhile prepare a smooth paste of 1 tbsp of cashew and 1 cup of thick Yogurt. If you are afraid of Yogurt tending to break, wait for the pan to cool a little before adding the yogurt. You can also add a pinch of flour to the yogurt.
Add this to the pan and mix with the chicken pieces so that all the pieces are uniformly coated.
Wait for maybe 1 more minute, to err on the side of caution, and then put the pan back on low heat.

Let it cook at low heat for 2 minutes. Now add about 1 cup of water, salt to taste, mix everything and let it come to a simmer at medium heat. Cover and cook till chicken is done.

Taste and adjust for seasonings. The gravy should not be too much but clinging to the chicken pieces. If you see gravy is watery reduce the gravy by removing cover and letting it simmer.
Serve with Rice or Roti.
